Tropical Coconut Smoothie Recipe w/ Frozen Fruit (Bananas & Pineapple), Lactose-Free…
Since my daughter is lactose intolerant (and I’m starting as well), I try to stay away from smoothies that require milk or milkshakes. The only downside is missing out on the thick consistency of milk-based drinks. But, the other day, I had an epiphany – to use coconut milk in a tropical-type smoothie recipe. The end result is a creamy, flavorful frozen drink that goes down oh so smoothly.
This recipe only uses four, totally natural ingredients and can be made in about five minutes. It is also lactose free. Those on a Paleo diet can enjoy this as well. A Tropical Coconut Smoothie is perfect for the warmer weather and to set the tone for an island-pace kind of day.
The only preparation that might be needed is to peel and freeze some bananas if you don’t have any already on hand. You can also use room temperature bananas and add in some ice. Doing so will change the consistency of the the smoothie though. Other frozen fruit may be used if desired (i.e. mango, peach, etc.).
I hope you enjoy this perfect blend of sweetness and tartness, giving your tastebuds a tropical vacation in your mouth.
- 3/4 cup Coconut Milk
- 1 cup Frozen Pineapple Chunks
- 1 Frozen Banana
- 1 cup Orange Juice
- Add wet ingredients.
- Add frozen ingredients.
- Blend until smooth.
- Serve.
